CHUCK WAGON FRIED 'TATERS


Kinda cool when I waked up this mornin'; made me kinda hongry. Not for jest anything like bacon or sausage with egg and crecent roll, or, grits with bacon tidbits and black peper, and, even cause it;s good fer yore colesstrel, I'm tired of that there instant oatmeal. After thinking on it for a while, I got it. I want some genuine chuck wagon cooked 'taters; got everything but the chuckwagon.

I know I have a couple of pounds of Idaho 'taters that came from Mexico. They wouldn't be sprouting in January if they came from Idaho: they can plant year around in Mexico. They was discovered in South America about five hundred years ago and taken to Europe and Ireland the they had a 'tater famine that brought both 'taters and Irish folks to this country.

I looked on the broiler rack under the oven burner at the old cast iron skillet that has been serving up food for five generations. It earned its retirement but when you heated it up, put some home churned sour cream butter, made by hand churning clabbered milk, into it, then poured corn bread batter into that hot fat, it made a crust that made Fritos tase like lukewarm water. Cooks 'taters real good, too, but--. I closed the broiler door real keerful, so's it wouldn's feel left out, and got out my stainless steel, copper cored, non stick coated skillet and placed it on the stove, the added some of Canola oil. (It's good fer yore colestrel., too).

I poured them 'taters out of the ventilated plastic bag into my doublewide sink and added warm water from my instant water heater under the sink, then using my Nylon vegetable brush, I scrubbed those 'taters after poppong the sprouts off into the garbage disposal and putting the ventilated plastic bag into the garbage compacter.. Can't see what it hurts: some say this plaastic lasts a long time in the ground. I use my 100% Nylon brush to scrub with.

I laid my laminated maple cutting board on my Formica clad cabinet counter top and got my genine Gensu, serrated blade, surgical steel knife out to cut the 'taters into chunks that will fit into my variable speed GE Food Processor so's it can slice them 'taters.. O' course I peeled and sliced a large white onion in with them 'taters and a good handful of yellow corn meal, too. This cornmeal box is one of them there moisture resistant, weevil proof boxes with the easy off, positive seal, white plastic lid. I have to figure out where to put that stainless steel, chrome plated basket I had that bag of 'taters in.

I like these Formica counertops. 'Course lotta folks gittin' granite tops but, if I got that ol' cast iron skillet out again an' I dropped it on that there granite, the skillet and the granite would break. 'sides, I like old fashioned stuff.

I turned the burner on my stove with the electronic ignition and the natural gas lit immediately. Them newfangled 'lectric stoves: cain't tell whethr they aire lit or not lessen they burn you. Don't have no strin of peppers hanging so I have to use that boxed pepper, but I got me a box of that real fancy sea salt from the Media Terranean sea. Hear tell some folks just wouldn't have nothin' else in their Magaritas: oughta be real good on these genuine Chuck Wagon 'taters.

Guess 'll go sit in my 'lectric heated, vibrating, lift chair whilst these 'taters aire cooking an' watch "Dancin' with the Stars" or "Dallas Cowboy Cheer Leaders" on my digital TV. Cain't never 'member which remote goes to the Stereo, the TV, ot the Games. Wish I had room for my computer in here. Maybe I'll add one of them family rooms.

Well, them genuine camp fire chuckwagon style fried 'taters is near 'bout done. Man, do they smell good. Tha Central Heat need to be turned down one or two degrees: no need to being uncomfortable while I'm gettin' a TV tray to eat my 'taters on. Guess I'll use a paper plate and plastic tableware so I don't need to load the dishwasher.

Oh, them 'taters smell good. Jest ain't nothin' like good ol' fashioned country campfire cooking and living the outdoor life. Roughin' it sure makes a body feel good. Where did I put that cell phone? I need to check Dunn and Bradstreet, send that blonde joke I heard to Joe, get an e-mail to my son in Kuwait so he can answer before he goes to bed.

    Glad to see, and I mean really SEE that living in two different generations can truly be worked out. YOU'VE got it down good! With a smile, and yes, maybe a tad bit more "colesstrel" than you started out with!

  2. Arlie... I couldn't have written a piece like this if I'd been 25 years old!! I'm printing this one.. it has a zillion tidbits of good stuff in it... and I'm still tasting those taters as I type this. You never cease to amaze me. Pure and simple. So, here's the deal.. i'm not buying that thing of... "well i'm 80+ years old... blah blah blah..." no way!!! you are smart as a whip, and alot smarter than the majority of whips (did I say majority whip as in the government.. oh wait.. no.. not referring to that one)... anyways... you are smarter than most whips 1/4 of your age!! We need you in Congress... better yet.. how bout the white house... next year IS an election year. All of those people up on Capitol Hill need to stroll down that hill and log on and read your blog.     Cherryl Elam Zollars Thank you SO much, Arlie!! Boy did this bring back a few memories and maybe a tear or two! You can't know how I miss all that. Well, the "old" part! I could almost see my Mom and Grandma in the kitchen and one of them saying "Now Katie! You need to drag one of them kitchen chairs in here to the cabinet so you can help!! Just 'cause your short don't mean you can't cook!!"
